Trinidadian Black Cake aka Caribbean Rum Fruit Cake is a holiday institution, packed with boozy prunes, currants, raisins, cherries, and a confetti of candied fruits! The ultimate recipe is usually a treasured family gem; Kin-Lien's version hails from her aunt, the queen of black cakes back home! Thanks to the generous splash of liquor, this cake stays fabulously moist and can hang out for months. A heads up: Please do NOT drive after eating this cake! (V). The cake comes packaged with a bow and card for gift giving to family and friends.
